If you plant green beans in your garden this summer, you can preserve and use your home-grown green beans in your next Thanksgiving meal. In this article, you will learn more about your green bean planting options and how to choose which beans to grow and enjoy. Janelle Rietz-Kamenar, Master Gardener Many of us choose to adorn our holiday tables with the classic Green Bean Casserole (French cut green beans, fried onions, and mushroom soup). For trivia types, this casserole was first created in 1955 by Dorcas Reilly while employed at the Campbell Soup Company. As of 2020, Campbells estimated that approximately 20 million U. S. Thanksgiving dinners include this dish each year. That’s a lot of beans! And a reason to contemplate growing green beans next gardening season and then freezing them for the holiday season. Read more to determine if you should plant the Pole or Bush type green beans. Green Beans are also referred to as Snap Beans or String Beans and are a member of the wax bean family. And not to confuse people, but string beans can also be yellow, red, striped, and even purple (the purple disappears when cooked)! Growing green beans in your garden has many benefits; to name a few: · Easy to grow especially for young children as the larger seed size makes it easier to plant and the long green bean makes it easier for them to see to harvest; · Excellent companion plant to tomatoes as they put nitrogen back into the soil; · Can be grown in smaller spaces but require full sun; and · Excellent source of nutrition (low in calories, high in antioxidants including Vitamin C and fiber). In general, there are two types of these beans for gardeners to consider: Pole vs. Bush beans. Pole Beans, simply put, are vining plants which must be supported by a trellis, pole, or fence. They can grow up to 6 to 7 feet long. Bush beans are low growing plants that grow 1 to 2 feet tall only. So which type is better to plant: Advantages of Bush Beans: · No trellis or pole is required; · Great for compacted, raised beds; · Have a shorter production time (usually harvest within 50 to 55 days vs. 55 to 65 days for pole beans) · Produce all their beans within a short time (2 to 3 weeks) which is great for freezing and can stagger planting times for additional harvests Advantages of Pole Beans: · More productive than bush beans (in a 10-foot row space, pole beans can yield 8 pounds of produce compared to bush beans at 4 to 5 pounds) · Have a longer harvest window if you prefer to eat them fresh (continually harvest them). · Less susceptible to diseases such as powdery mildew · Have a better flavor than bush beans (sweeter and starchier) · Easier to harvest (gives your back a break) · Excellent companion plant to corn and squash/cucumber or with a teepee system you can plant lettuce, parsley, or radishes in the center. So, while you are enjoying your holiday feast, remember to dream about the upcoming planting season and decide if you are going to plant pole vs. bush string beans next year! < Back Planning Your Garden for Next Year Begins Now! The active, outdoor gardening season is coming to a close. After you clean up your garden and put your clean tools away, take some time to reflect on how your garden performed this season. Aren’t there always some improvements to be made? What sort of corrective or preventive strategies might you implement to make next year even better? Read this article for a reminder of some gardening fundamentals that may help you attain gardening success next year. Alyce Neperud, Dakota County Master Gardener Intern The active, outdoor gardening season is coming to a close. After you clean up your garden and put your clean tools away, take some time to reflect on how your garden performed this season. Aren’t there always some improvements to be made? What sort of corrective or preventive strategies might you implement to make next year even better? The Master Gardeners in Dakota County grow gardens that trial vegetable and flower varieties for the UMN Extension. Much of the produce from these gardens is delivered to local food shelves so success is important. These gardeners also review garden wins and disappointments as they consider future practices. In early fall I chatted with Master Gardeners at one of the seed trial and community gardens about their gardening practices. Of course, every year is different. While drought was an issue last year, this year the impacts of a very wet year were top of mind. Even so, the team kept returning to fundamental practices. This article will encourage you to look at your garden through the lens of these practices. And I’ll share some reflections from the seed trial garden. Fundamental Practices 1. Start with quality seeds and plants Locate reputable sources through research. Look at their growing practices and ask other gardeners for their favorite sources. Are your plants suitable for our northern climate? ( Hardiness zones 5a (in some places) and above ) Look for disease resistance or tolerance, especially if disease has been a problem. If purchasing plants locally, look for signs of insects and disease. “Reject any plant with dark, discolored or soft sunken spots on leaves, stems or roots.” UMN Extension 2. Maintain a healthy, living soil - Add organic materials to your soil in combination with soil testing. Know your soil. UMN extension recommends testing every 3-5 years. I am 100% convinced I need a soil test for my garden because the same plant that struggled in my garden produced beautiful red peppers in a new garden bed! You can obtain a soil test through the UMN soil testing lab for a small fee. The test will give you the estimated soil texture, pH (acidity), percent of soil organic matter and levels of phosphorus(P) and potassium(K). There are optimal levels of Nitrogen (N), Phosphorus, and Potassium for plant growth. For example, too much nitrogen can stunt growth and, in some plants, may encourage leaf growth but delay fruiting. Finally, the soil test will recommend soil amendments and fertilizers that address any deficiencies that are found. Add organic matter as needed. A common practice is to add a couple inches of compost each year. Consider cover crops . Do frequent health checks - disease and pests can establish very quickly. Remove diseased material immediately and clean your tools. Only fully composted disease-free compost should be returned to the garden. Rotate Crops. Diseases are usually shared within a plant family. Did you know peppers and tomatoes and eggplant are in the same Solanaceae (nightshade) family? Maintain moist but not water-logged soil Moisture is tightly coupled with soil health. Saturated soil can lead to nitrogen loss and flooding can prevent the roots from taking up oxygen and other nutrients. Assess watering practices in the garden - Watering from above can cause disease to splash up from the soil and over saturate plant material. Soaker hoses are one option to minimize spread of diseases. Improve drainage as needed – One strategy to control water is raised beds. Forming raised beds ensures good drainage, which is more crucial for some plant families. An example of this is the Gourd family (Cucurbitaceae): cucumber, melon, summer and winter squash, pumpkin and gourd. Use mulch wisely. Mulch keeps soil moist longer and helps maintain healthy soil by limiting loss of nutrients from runoff. Use mulch that is both disease and chemical free (e.g. wet mulch may be diseased and avoid grass clippings from a treated lawn). UMN extension references: Watering the Vegetable Garden Raised Bed Gardens Fertilizing and Watering Container Plants 4. Maintain airflow between plants - Be generous with spacing. Provide appropriate structure to maximize airflow and keep produce off the ground. Take into consideration the weight of produce and the spacing increments; for example, a pole bean loves twining around a string, peas love some chicken wire and tomatoes need a good strong cage. Get these in place early and keep an eye out, as plants often need ‘training’. Prune as needed. An indeterminate tomato plant, for example, will keep growing. Prune plants if crowding impacts airflow and sunlight. UMN extension references: Trellises and Cages to support garden vegetables Preventing Plant Diseases in the Garden 5. Invite pollinators in Combining vegetables and flowers in one area is becoming more common. Mixing not only helps with plant pollination but provides more color and variety, keeping the garden beautiful and supporting beneficial insects. See article “ Companion Gardens are the Best ” And finally, what reflections on the year did the seed trial and community garden gardeners come up with? In general, it was a very wet year and overall production was lower than previous years. Beans struggled early but rebounded in late summer as the sun returned and the soil was no longer saturated. Despite valiant efforts to manage squash beetles and limit impact of mildew and other disease, squash and cucumber plants eventually succumbed. Tomato and pepper plants started slow but were very productive in the long run despite some tomato blight. A mulch of loose, not too dense straw was a good choice and plants were spaced for sufficient airflow. Cocoa mulch smelled delicious but became wet, compressed and slick from the rain. Flowers and pollinators were abundant and admired. At the end of September, the team is still delivering quality produce to the food shelf: And that is success! < Back Shade Gardens Susan Ball, Dakota Gardener Master Gardener Shade – a gardener’s headache? Does your garden require full sun to be beautiful? NO! While most flowers do require hours of full sun, there are attractive foliage plants and even colorful flowering plants that flourish in shade. As you start to plan your garden for 2025, this article gives you lots of ideas for how to make the most of the areas of your yard that are a bit sun challenged. Shade. A gardener’s headache. All the beautiful and brilliantly colored plants require hours of sun. What’s left is dull and colorless. Not true! While most flowers do require hours of full sun, there are attractive foliage plants and even colorful flowering plants that flourish in shade. First off, know that there are different levels of shade, from part to deep. Deep or full shade means a spot never gets direct sunlight, or only a very short amount of mild, morning sunshine. Part shade means about 4 hours of sun—but mostly morning sun, not blazing-hot afternoon sun. To garden successfully in the shade, know the size of your planting area, your cold hardiness zone (in Dakota County and most of middle Minnesota that would be zone 4), your shade level and your soil conditions. You also need to know if you want to grow perennials - which regrow every year - or annuals - which live for one growing season and then die. (You can grow both). With this information in hand, you can select your plants. If you haven’t heard of that shade “staple”, the hosta, know that hostas - perennials with leaves in many color combinations and textures - are not only easy to grow but can survive in deep shade. They even have flowers, usually violet but white as well. While many hostas prefer part shade - particularly those with gold tones and those with edging or centers of white or cream - “blue” hostas need deep shade to protect the waxy coating on their leaves. Hostas can grow in a wide range of soils, although they prefer moist soils rich in organic matter. While spring is the preferred planting time, hostas can be planted all summer. Be sure to give them extra water then so the roots develop without drying out. Other shade plants include Lenten rose, Jacob’s ladder, astilbe, Dutchman’s breeches and its relative, bleeding hearts . . . and shrubs such as hydrangeas and rhododendrons. Many native plants, especially the spring blooming ones, are also shade lovers. Lenten Roses , also known as Hellebores , are shade plants producing delicate, long-lasting flowers in late winter and early spring. They need little to no moisture and are hardy to zone 4. These are the pluses. Although lovely, a major minus is that these flowers hang downward under their leaves so you must practically stand on your head to see and enjoy them. They can be found at nurseries or ordered online. Dutchmen’s breeches (their delicate white flowers look like breeches hanging on a clothes line), their relative Bleeding hearts and lily of the valley, tiny, bell-like flowers with a beautiful fragrance, are other spring perennials you might want to add to your shade garden. All are hardy in zone 4 and require similar conditions: shade, little to no moisture and well-drained soil. Bleeding Heart Then there are native plants, most of which thrive in shade. Spring Beauty, which, as the name suggests, blooms in the spring, Lady’s Slipper, Jack-in-the Pulpit, Trillium (big white flowers) and May Apples all love shade. Generally, not available at big box stores, look for these charming natives at native plant nurseries or online. There are also summer blooming shade flowers to consider. Brunnera is a perennial with tiny blue flowers that loves shade but does not tolerate droughts or dry soil. As long as you water it and keep it away from too much sun, it will bloom beautifully. It is hardy to zone 3. Jack Frost Brunnera Another perennial with tiny flowers, coral bells , also grows in shade and has a variety of colored foliage. This delicate blooming plant joins foam flower, Jacob’s ladder and astilbes, additional summer blooming shade perennials. All of these plants need to be well-watered, especially when growing under tree shade (which can dry them out). Foam flowers have small, poofy flowers that grow in clusters and like partial and full shade. Be careful not to underwater or overwater foamflower - both are fatal. Jacob’s Ladder has attractive blue and purple flowers and has the added bonus of being rabbit and deer resistant. Astilbes grow large (up to 5 feet depending on the variety), and have showy plumes of tiny flowers in shades of pink, red, white and royal blue that will liven up any shady area. They are also, reportedly, deer resistant. If you are looking for a shade loving plant that will also attract butterflies and hummingbirds to your garden Black Bugbane is your flower. These fragrant, tall, fluffy flowers sport dark purple leaves that will turn white by the end of the summer. Grow them in partial to full shade with medium moisture. Then there are the annuals. Among those you may want to consider are coleus , a leafy plant with incredible colored leaves: pink and green, purples and yellow and dark reds and almost everything in-between. Impatiens are another pretty annual in multiple colors - red, pink, orange, white and violet. These plants bloom well in shade but are susceptible to dry conditions so be sure to keep them well watered. Shade begonias , with similar colored flowers - except orange and violet - have smaller flowers but are studier plants, tolerating some dryness. Coleus Heartbreaker There are beautiful shrubs that tolerate partial to full shade as well. Check out white hydrangeas, single and double flowered rhododendrons and their relatives, the azaleas . All these shrubs have beautiful and abundant flowers in multiple colors and can be found at most big box stores. Shade, even deep shade, is no reason for a gardener to despair. With planning, a combination of annuals, perennials and shrubs will provide texture and color in shade from spring through fall. < Back Earth Month is for Everyone! Kasha Zeman, Dakota County Master Gardener It is now April and that means EARTH MONTH! While many of us think about growing, planting, tending, and gardening all year long, if you are like me, that doesn’t always include water conservation, energy conservation, cleaning up my neighborhood, etc. The month of Earth Month is a reminder that we can do better to help preserve and cherish planet Earth. For the little ones in our lives, it is never too early (or too late) to teach them how to become better caretakers of mother nature. Please read on to find activities to do with the young people in your life during the month of April (and the other 11 months too!). April is Earth Month, but how did it become Earth Month? Actually, it didn’t start as Earth Month. It started as Earth Day. In 1970, a senator by the name of Gaylord Nelson, knowing there weren’t laws in the United States to protect the earth’s resources, created awareness about the issue. It was decided that in April of 1970 people in the United States were going to gather and have demonstrations about the deterioration of earth’s resources and the need for protection of our air, water, trees, animals, land etc. On April 22, 1970, over twenty million people across the nation participated in the first ever Earth Day. People at colleges, universities, high schools, middle schools, elementary schools, and communities gathered to address the importance of protecting the Earth. From then on, we have celebrated Earth Day every April 22. But, as we know, this has grown to into celebrating Earth Month every April! Earth Month Activities There are so many activities that can be done to help improve and conserve Earth’s resources. This article is going to focus on a few specific things for us to do with the kids in our lives by conserving water, conserving energy, planting trees, and cleaning up garbage. Conserving water Water is one of our most precious resources. Even though about seventy percent of the earth’s surface is covered by water, only about three percent is fresh water. Of that three percent of fresh water, only about one percent of that water can be used as drinking water. Depending on the age of the children in your lives, percentages can be very abstract and hard to understand. So, try this activity with them. Gather 100 rocks, pebbles, acorns, pinecones, crayons…really anything small and easy to collect. Explain that these 100 items represent Earth’s surface. Then count out 30 items and set them off to one side. Explain that these thirty items are the ground we stand on, the trees we see, the buildings we shop in, the schools we attend, the parks we play at, etc. Then show the remaining 70 items. Explain that these 70 items represent the rest of earth’s surface, and it is all water! Even though it is water, most of it isn’t fresh water. Explain that there is a difference between fresh water and salt water. Depending on your comfort level, you may even add a bit of table salt to a glass of water and have everyone try a small sip to see how undrinkable it is. Next, of those remaining 70 items, remove three. Explain that out of those 70 items, these three represent the only fresh water we have on earth, the lakes and rivers we enjoy swimming and fishing in. Finally, remove one item and explain that this one item represents the only drinkable water we have on Earth. Because there is so little drinkable water on Earth, that is why it is so precious and why we need to conserve it. Ways to Conserve Water Turn off the faucet while washing hands and brushing teeth. Take quick showers. No more than 5 minutes. When rinsing dishes, don’t turn the faucet on full strength. Use rain barrels for watering plants and flowers outdoors. If you are a homeowner and don’t already have a rain barrel, Dakota County has information regarding how you can build your own through this link . If you would like a rain barrel, but do not want to build your own, you can purchase one at a discounted price, while supplies last, from the Recycling Association of Minnesota . (They sell compost bins too! Conserving Energy In an ideal world we would all use energy produced only by the sun, wind, and water. But until that becomes more economically possible for all of us, here are a few simple ways to conserve energy. Turn off lights whenever you leave a room. Regarding your house temperature, turn your thermostat off whenever the weather is comfortable and open your windows. During the winter months, turn the thermostat down to a lower temperature at night. During the summer months, turn the thermostat up a few degrees. Even a few degrees makes a big difference! Close the blinds during really hot and really cold days. This will keep your air conditioner and furnace from having to work constantly. Ride your bike to school and work. Plan to have to leave a bit early and come home a little later. You will save on gas money and get exercise too! This next one is one of my favorite energy conserving activities to do with my own kid - have a light and electronics free day! When we have one of those rare days where no one has any planned activities, we sometimes have a light and electronics free day. We don’t turn on any overhead lights or lamps. You won’t be able to avoid a completely light free day because of the refrigerator, microwave, oven, garage door, etc. However, we unplug what we can and put tape over all the light switches, in case we forget. We tuck our iPads, laptops, and phones away, and prepare for a day outdoors and playing games by candlelight. Planting Trees Planting trees is a great way to help the environment and create cleaner air. An average 50-year-old mature tree can produce enough oxygen for 4 people to breathe a year! In addition, trees take in greenhouse gases and remove particle matter from our air. So, not only do we get oxygen from trees, but they also remove toxins that are unhealthy for us. Trees also provide shade and can help to reduce energy costs that come from using air conditioners in the summer. You can purchase trees from local greenhouses in various sizes and species. Often around Arbor Day, which is Friday, April 26 th this year, many organizations will give away free tree seedlings. Also, if you have a large area for which you are looking to plant trees, seedlings may be purchased in bulk - 50 seedlings per order from the Arbor Day Foundation . In addition, if you are part of an organization such as a school, library or youth group you can sign your organization up with “Neighborhood Forest.” This organization provides free tree seedlings to children. Once the organization is registered, parents can sign their kiddos up to get a free seedling. Cleaning up Garbage When I was in elementary school, we had a student group called the Green Team. One thing our students organized, was a school-wide community clean up. The teachers, volunteers, and students went out with gloves and garbage bags and cleaned up trash in our community. This is an easy activity for a family or a neighborhood to do together. Afterward, you can recycle anything that is allowed at your local recycling center and throw away the rest. Most times, when my family takes our dog for a walk, we bring a bag with us and pick up trash as we go. Community clean-up doesn’t have to be once a year or just in the month of April. We can all, including our children, participate in making our environment cleaner and healthier. April – Earth Month – is the perfect time to inspire your children - and yourselves! In addition, placing containers as part of your in-ground garden can add additional space and/or additional beauty to the garden. This article will help you plan your container garden. Container gardening provides those with little or no yard an opportunity to grow vegetable, herbs or flowers inside your home or on your deck or patio. In addition, placing containers as part of your in-ground garden can add additional space and/or additional beauty to the garden. So, what should you think about as you consider creating a container garden? Selecting a Container A container can be anything that can hold the soil and plants. However, it is preferable that the container have a drainage hole so the plants’ root systems aren’t sitting in water. If you are using a pot without drainage holes, consider shoreline plants since they like wet soil. In selecting your container consider eye appeal, convenient and cost. Eye Appeal: Appearance is, of course, important as you select containers for your plants. If you really like a decorative planter that doesn’t have a drainage hole, consider double potting - placing a pot with drainage hole and a saucer inside the decorative plant. Impact on plants: You do want to consider how the pot you are using will impact the plants you intend to place in those containers. When purchasing a pot or planter, take into consideration the type of plant you plan on placing in the pot and the impact on the care required. Consider what the pot is made of, the size of the pot and its color. Plastic pots are generally less costly. They are also lighter in weight. This can be of particular importance if you will be planting a larger plant. Also consider that plastic pots hold moisture and therefore the plants don’t need to be watered as frequently. You may prefer clay pots. Clay pots are usually more costly and are definitely heavier than plastic pots. Be aware that, because they are porous, the soil in clay pots dry out more quickly. The color of the pot also can have an impact on your plant. Darker planters absorb heat so, if the pot will be in direct sunlight the soil will dry out faster. Also think about the type of plant - is it one that likes heat or will wither due to the warmer environment in the dark pot? Selecting Soil All soil is not the same. Potting soil should be used in most container gardening. It includes ingredients such as plant food, peat moss, ground pine bark, and either perlite or vermiculite and a wetting agent added to keep the mix from drying out. Garden soil is predominantly soil, is denser and doesn’t drain as readily as potting soil. For plants such as cacti purchase soil specifically designed for those plants. Selecting Plants Consider the amount of sun when selecting the plants to insert in your container. If the plant is said to require full sun, that means it needs at least eight hours of sun. To allow your indoor plant to receive the most sunlight place near a south facing window. Plants that require shade, should be placed in a more protected location. Also consider the size of the container for a particular plant. Check to see if the plant prefers to have a lot of space for its root system or if it prefers a tighter space. Consider putting multiple plants in the same container. If you do choose to do this, make sure all the plants require the same type of growing environment including the same amount of sun and water. As for design - you may have heard the saying that containers should contain a “thriller, spiller and filler.” And that’s because it usually works. Include a tall, showy “thriller,” one or more plants that drape over the side of the pot (“spiller”), and one or more medium sized anchor plants in the middle (“filler”) when designing your container. Watering and Fertilizing Requirements Check on the requirements of the plant that you have selected. Then, water plants on their schedule, not yours. Overwatering is more frequently a problem than under watering. Signs of overwatering include: yellow or brown limp or droopy leaves and/or the overall plant looks wilted, limited new growth, algae or mold on the soil, rotted or stunted roots. If your soil is dried out, the plant looks wilted and/or the tips of the leaves appear dried out and brown it may indicate that your plant needs more water. Remember that one of the ingredients in potting soil is fertilizer. So don’t fertilize the plant immediately. When ready to fertilize follow the instructions for the fertilizer you purchase. Don’t over fertilize and note that plants don’t grow as rigorously during winter. So, plants require little or no fertilizer during winter months. Be Creative Have fun with your container gardening. Sarah Heidtke, Dakota County Master Gardener Keep an eye out for BUDS, LEAVES, and BLOSSOMS growing on the trees around you. Read on to learn more about these fun signs of spring and some tree education ideas for children of all ages! Your nose may tell you there are blossoms nearby and your ears may hear the buzzing of happy bees enjoying their nectar and pollen. How does the rounded or pointed shape of a bud compare to the flat shape of many leaves? How many different colors and shapes of blossoms can you find on a walk around your neighborhood, or a visit to the Minnesota Landscape Arboretum? pussy willow (salix discolor) In spring, trees start to wake up from their winter naps, called dormancy . The days are longer. The sunlight is stronger. The temperatures warm, allowing water to be pulled from the soil into the roots and then move within the tree. The sap starts flowing, full of energy. In a maple tree, we can even use the sap to make syrup for your pancakes. Yum! Sap helps feed the trees too. As the sap carries nutrients throughout the tree, BUDS swell at the end of tree branches - they are gathering energy and getting ready for the new season. Some big mammals and small insects like to munch on those tasty treats. 4 leaf Pay attention to the shape and structure of leaves - you can identify the tree by the kind of leaf it grows! < Back Snowdrops for the Early Spring Garden Janelle Rietz-Kamenar, Master Gardener Are you a gardener that loves to have flowering plants staggered throughout the growing season? Then perhaps you should consider planting snowdrops in your yard. They are the first spring bulb to bloom and they are known to pop up amongst the snow melt. They usually bloom before larger daffodils and tulips. Snowdrops (galanthus spp) are a member of the amaryllis family. However, they are a small, delicate-looking, single bloom white bell-shaped flower with several green upright leaves. They are native to Southern Europe and Asia Minor and are found in woodlands or wet, alpine grasslands of cool mountainous regions. Most are hardy in Zone 5 but some varieties range to Zone 2. The common variety for Minnesota is 3 to 6 inches tall. Of note, Giant snowdrops are not as hardy (Zones 4/5). Where to Plant Snowdrops should be planted in groups of up to 25 to be really seen. Plant them under deciduous trees or shrubs or near walkways where they can be visible in early spring when the snow is melting. They can even be planted in your grass but then you shouldn’t mow over them until 6 weeks after blooming. They go well combined with Siberian Squill, early small Daffodils, Winter Aconte, and Glory of the Snow. Some people also plant them in indoor containers and force them to bloom. How to Plant Plant them 3 inches apart and 3 inches deep in rich, well-drained soil in early fall when the night temperatures are in the 40s or 50s. Consider fertilizing them in the spring when shoots first appear. Pros and Cons Pros: First to bloom in Spring gets you looking forward to the growing season. They do not have any significant insect or disease issues and are deer resistant like daffodils. Cons: Snowdrops are poisonous if ingested by pets or children. To avoid skin irritations, gardeners should wear gloves when handling them. The safe garden produce preparation, maintenance, harvesting, storage and serving steps in this article help avoid foodborne illnesses from your garden fruits and vegetables. With the warming weather, Minnesota gardeners are starting to plant their edible crops. So, it is a good time to review tips for safely growing and harvesting vegetables and fruits in your garden. The safe garden produce preparation, maintenance, harvesting, storage and serving steps in this article help avoid foodborne illnesses with your garden fruits and vegetables. Why Safety Tips are Needed Foodborne illness caused by the naturally occurring bacteria, viruses, molds and/or pathogens found on raw produce not carefully washed or prepared can make you sick. (Note: These microorganisms are present in your garden whether you choose to use organic or conventional gardening methods). Additionally, it is also possible to get sick from contamination of produce from chemicals, such as cleaning solutions, fertilizers, pesticides, and heavy metals (lead) and other chemicals that may be found in garden soil or well water. Safely Growing and Harvesting Produce in Your Garden Site Preparation Locate your produce gardens away from manure piles, well caps, garbage cans, septic systems and areas where wildlife or the family pets roam. Use compost safely. Compost is the natural breakdown of organic materials, and also a source of pathogens. To be safe for gardening, your compost must reach a temperature of at least 130°F. Check the temperature with a compost thermometer. Do not use any animal waste, including pet waste, meat scraps or dairy product waste, in your compost bin. Garden Maintenance Use a safe water source, such as from municipal or public water systems. Avoid lakes, streams, ponds and streams as a water source, where they can be polluted by human sewage or animal waste, fertilizers and pesticides from lawns and farm fields, or chemicals from industry. Ground water, the source for well water, is less likely to have microbial contaminants, but test your well water yearly to ensure it is safe. Curtail animals and birds near your vegetation during the gardening season, by keeping pets away, minimizing vegetation at the edges to decrease nesting and hiding places for rats and mice, and stopping feeding of wild animals and birds near your produce garden. Discourage your backyard critters with the use of fencing and noise deterrents. Harvesting Use clean containers, preferably food-grade containers, to set your harvest in. Containers, such as garbage cans or old plastic bags, that originally held chemicals such as household cleaners or pesticides are not food-grade. Use clean hands or clean gloves (that have not been used to stir compost or pull weeds) when picking produce. Do not harvest when you are sick or have symptoms of an illness. Brush, shake or rub off any excess garden soil or debris before bringing produce into the kitchen. Watch out for signs of animals like scat, fur and nibbled produce, and discard the produce that is close to these signs, or that has visible animal feces on it. Storage If you choose to wash fruits and vegetables before storing, be sure to dry them thoroughly with a clean paper towel. (Never wash berries until you are ready to eat them.) If you choose to store without washing, shake, rub or brush off any garden dirt with a paper towel or soft brush while still outside. Store unwashed produce in plastic bags or containers. Keep fruit and vegetable bins clean. When washing produce fresh from the warm outdoors, the rinse water should not be more than 10 degrees colder than the produce. If you are washing refrigerated produce, use cold water. Fruits and vegetables needing refrigeration can be stored at 40° F or less. Fruits and vegetables stored at room temperature (onions, potatoes, tomatoes) should be in a cool, dry, pest-free, well-ventilated area separate from household chemicals. Canning and Preserving: Follow the USDA guidelines and jar instructions for safe canning: https://nchfp.uga.edu Serving Always wash your hands before serving. Always wash your produce before eating. Rinse fresh fruits and vegetables under cool, running, clean water, even if you do not plan to eat the skin or rind. Never use soap, detergent, or bleach solution to wash fresh fruits or vegetables. These solutions can affect flavor and may not be safe to ingest. Most root vegetables will need to be washed (before going into the kitchen) to remove sand and soil. Use a clean bucket or spray table outside to spray or dunk the produce to remove soil. Avoid bringing the produce into your home kitchen before using, as there is more potential for cross-contamination. Avoid cross-contamination when preparing fruits and vegetables, which occurs when a clean work surface, such as a cutting board or utensil (paring knife) or uncontaminated food is contaminated by dirty work surfaces, utensils, hands or food. If you have leftover produce that has been cut, sliced, or cooked, store it in clean, air-tight containers in the refrigerator at 40°F or less. < Back Eating Bitter Melon Anita Oakman, Dakota County Master Gardener Intern What’s the big deal with bitter melon? I mean, it’s bitter even when it’s mature! What would compel someone to eat it? Believe it or not, this bumpy and sometimes spiky little vegetable has been eaten for centuries by various cultures around the world who have learned to embrace and even enjoy that bitterness. At the same time, they have also reaped its nutritional benefits. Read on to learn more about the benefits of bitter melon and how to enjoy eating it! Bitter melon has long been used in traditional medicine to treat various kinds of ailments, most notably diabetes. In developing countries in Asia, Africa, Central and South America it has also been used to treat dysmenorrhea, eczema, gout, leprosy, psoriasis, gout, and even scabies. In developed nations, recent animal and clinical studies of bitter melon extract have shown that it has potential therapeutic benefit in diabetes and obesity related metabolic dysfunction.1 Does the above information encourage you to give it a try the next time you see it at your local farmers’ market? Maybe the following recipe will. I consulted with my favorite Filipino friends, Teddie and Leila Maasin, to find a recipe that could be enjoyed by someone trying bitter melon for the first time and they shared this one (with my edits ): Vegetable Fritters 4 cups of prepared vegetables to include the following: 1 thinly sliced Chinese bitter melon 1 shredded medium sweet potato (I used a Murasaki sweet potato ) 1 large, shredded carrot 1 chopped medium onion 1 to 2 cups chopped spinach or celery leaves ( or whatever leafy greens you have ) 2 beaten eggs 1 ½ teaspoons salt 1 cup all-purpose flour ½ cup cornstarch Black pepper to taste Vegetable ( or peanut ) oil for deep frying To prepare bitter melon, slice lengthwise, remove seeds and spongy pith, and thinly slice in cross sections. Soak slices for 1 hour in salted water to remove some of the bitterness, then squeeze out as much liquid as possible and place slices in a large mixing bowl. Add and mix in the remaining vegetables, then stir in beaten eggs until well combined with the vegetables. Now would be a good time to start heating your vegetable oil in a deep saucepan or frying pan. (Don’t forget to have a pan cover handy!) In a smaller mixing bowl, combine flour, cornstarch, 1 ½ teaspoons salt, and black pepper to taste. Add this mixture to the larger mixing bowl with the vegetables and mix until you have a vegetable-laden batter. Pre-form patties from this batter, adding flour or water to get them to hold together. Fry patties in hot oil until medium brown, then remove them to a platter lined with paper towels to wick up excess oil. I like to serve these vegetable fritters with sweet chili sauces like these: Obviously, the recipe featured above is not the most healthful of bitter melon recipes due to the deep-frying cooking method. If you’d like to try another, just look for any of the numerous stir-fry recipes available on the Internet. But what happens to butterflies when the weather gets cold? Well, many butterflies migrate or move from Minnesota to warmer places. In those warmer places, butterflies can also find their food sources – flowers. Since flowers in Minnesota don’t bloom in the winter, butterflies need to fly to areas of the world where they do. Some butterflies who already live in warm climates, will move to a different location because if they stay in one place, butterfly caterpillars will eat all of the available food. Butterflies usually start to migrate in September or October, depending on the weather. Monarch butterflies spend their winter in Mexico and Southern California. (Can you find these places on a map?) Monarch butterflies are the only butterflies to migrate so far away (2,500 miles) each year. In Mexico, the butterflies live in oyamel fir trees and return to the same trees every year. What is really strange, is that these butterflies are not the same butterflies who migrated to these Mexican trees in the prior year. These butterflies were born around mid-August and are the great-great-grandchildren of the butterflies who migrated in the earlier year. So, how do the younger monarchs know which trees to fly to? Scientists think that Monarch butterflies rely on instinct, the sun and magnetic compasses to know where to go. In the spring, the Monarch butterflies fly back to Minnesota because the type of food that they eat is not available to them in Mexico. One sad fact is that the winter homes of the Monarch butterfly are endangered because people are cutting down their favorite trees to build things like roads and houses. In Minnesota, we can help Monarch butterflies to survive by planting milkweed plants and not using poisonous sprays on our plants. < Back Plant American Bittersweet and Gourds for a Fall Reward Gail Maifeld, Master Gardener If you want to have beautiful American Bittersweet or quirky gourds this fall, find a place for them in your garden this spring. Read this article to learn more about why you want these plants to be part of your garden and how to grow them successfully. American Bittersweet American Bittersweet (Celastrus orbiculatus) is a stunning addition to a garden and a beautiful fall extension of the season. American Bittersweet should not be confused with Oriental bittersweet (Celastrus scandens). The Oriental bittersweet is the invasive variety with the ability to girdle and overpower natural vegetation. Double check the identification tag when purchasing, making sure that the plant is American Bittersweet. American Bittersweet vines up and over an arbor with tiny white flowers in the spring, dark green foliage in the summer and bright red/orange berries the fall. A mature female plant will produce flowers that develop into berries. Located at the end of the woody stem, the berries make attractive arrangements indoors and food for birds outdoors. A new variety, Summer Rhapsody, has been developed by the University of Minnesota. This new variety does not need both female and male plants for berries to form. Bittersweet requires full sun, regular garden soil, and a 6 -10 foot arbor or trellis to climb and grow. American bittersweet is losing its natural habitat of woodlands, fence rows, and open prairies but can still be found in the Midwest. American bittersweet would be a rewarding addition to a native garden. Gourds Fall is a ‘bittersweet’ time for gardeners. In one respect the gardener is reflective on a successful season but sad to see blooms fade. The addition of gourds to a fence row or on a 6 foot trellis will hide the fading foliage of other plants. Gourds are members of the pumpkin family and sometimes confused with pumpkins and squash. Gourds are one of the oldest cultivated plants. Egyptians used them for water bottles and as utensils, storage containers, and dippers by indigenous peoples of North America. They can be found at farmer’s markets designed as bird houses and other items. Numerous varieties of gourds are easy to grow in regular garden soil and can be planted around other crops. Gourd vines have tiny tendrils that reach for wire or another plant to twine around. They will also trail on the ground. Gourds are interesting for color, shape, texture, and color. Preparation of gourds for carving is a year long process. After the frost has killed the vines, arrange the harvested gourds in a shed or dry garage. Let the gourds dry for 6 months to a year. Then, using a small sharp tool make an incision and clean out the inside. Seeds will rattle in dry gourds. Scrub the exterior to remove dirt and let the gourd dry before painting. Gourds are hard shelled so unlike the soft-shelled pumpkin they will last in an indoor arrangement. American bittersweet and gourds will extend your gardens life. < Back Root Veggie Tart Joy Johnson, Master Gardener Root veggies are popular to grow in home gardens, easy to store, and very nutritious. This “Root Veggie Tart” was a winner with Joy Johnson’s entire family. A delicious and nutritious vegetable treat with fresh or stored root veggies. I made this tart for Easter dinner last spring and taste tested it on 24 of my relatives. Since everyone loved it, from oldest to youngest I thought I’d share it with you. The veggies I used were ones that had been stored over the winter from last fall’s crop, but I’m sharing it now, since you may have fresh root vegetables that you are harvesting. I made a large batch, but you can scale it down to family size quite easily. Feel free to add or subtract root veggies using what you have on hand, it tastes just as good no matter the mix of veggies. Ingredients : 6 Yukon Gold potatoes, peeled and cut into 1-inch cubes 1 huge, sweet potato or 3 smaller ones, peeled and cut into 1-inch cubes 6 medium carrots, peeled and sliced into 1-inch lengths 3 medium parsnips, peeled and cut into 1-inch chunks 1 onion, peeled and cut into small pieces ¾ cup olive oil ¾ cup sugar 3 Tablespoons balsamic vinegar 1 Tablespoon fresh rosemary, chopped 2 teaspoons dried sage. If you have fresh sage, use 1 Tablespoon of leaves 4 oz. goat cheese 1 ½ 9-inch pie dough rounds. Roll together into one piece large enough to cover your casserole dish. Preparation: Preheat oven to 400. Put the cut-up veggies in a large zip lock bag, pour in the olive oil and seal bag. Rotate bag until all veggies are coated with oil. Dump out onto one or two rimmed baking sheets, single layer, sprinkle with salt and pepper. Put in the oven to roast until golden around the edges and tender, 30-35 min. Let cool. While the veggies are roasting, make the glaze: Cook sugar in 6 tablespoons for water in a small saucepan over medium-high heat, swirling pan occasionally, until mixture is slightly amber colored, 5-7 minutes. Remove from heat and add the vinegar and a pinch of salt, swirling pan to combine. Quickly pour the glaze into the casserole dish, tilt and rotate to evenly coat. Scatter the rosemary and sage over top. Put all the veggies into the casserole dish on top of the glaze. Wiggle them around and press them together gently. Crumble the goat cheese over the vegetables. Drape the rolled-out pie crust over the vegetables in the casserole dish, tuck the edges of the crust down along the inside edge. You may need to use a butter knife to gently push the crust between the veggies and the edges of the dish. Bake until crust looks dry, about 20 minutes, reduce the heat to 350 and bake until crust is golden brown, 15-20 minutes. Dale’s Grapefruit-Basil Martini Here is a delicious cocktail that my brother came up with on the same day I made the veggie tart. It was delicious and refreshing. 3 parts fresh-squeezed grapefruit juice 1 part grapefruit vodka (Dale uses Citron – the one with no added sugar) ½ part Elderflower liqueur (Dale uses St. Germain) ½ part fresh lime juice ½ part simple syrup to taste (1 part sugar, 2 parts water) 1-2 sprigs fresh basil 2-3 drops grapefruit bitters Muddle basil in the grapefruit juice and refrigerate for 24 hours in a Mason jar. Stir or shake periodically. After 24 hours, strain out the basil (a few remaining green flecks are okay). Mix all ingredients in a shaker with ice, shake and strain into a martini glass.
